New restaurant opening at former Marisol location in Downtown Kitchener

The owners of Waterloo’s Hogtails BBQ are starting a new venture in Downtown Kitchener.

The Grand Trunk Saloon is expected to open it’s doors later this month, and will be located downtown where the once-popular Marisol Restaurante used to be.

Darryl Haus is the Managing Partner for GTS. He told 570 News what people can expect.

“It’ll be pretty cool– it’s a full food and cocktail restaurant, and our main focus for the menu is to serve Southern-inspired soul food or comfort food. We will be serving our famous fried chicken– that we serve currently at ‘Hogtails’– and it’ll be kind of a laid back atmosphere.”

Haus added that the cocktails will be a blend of classics and their own innovations. He said that although they’ll serve some of the same dishes as their Waterloo restaurant ‘Hogtails’, it will be very different.

“It’s a little bit more polished than ‘Hogtails’. It’s not fine dining, it’s not fancy– but it’s a simple and accesible restaurant.”

Haus and his wife Sarah own Hogtails BBQ in Waterloo, but will be joining up with business partner Manish Patel and Executive Chef Jaret Flannigan for this new space.

Haus also said that he’s excited that the new restaurant will be located on Ontario Street, as it was important to them to open in the downtown core.

“We’ve been looking for a good spot in the core for the last two years. We’re tired of hearing that downtown is suffering, and we want to be part of the change to revamp the area.”

House added that there is no opening date set currently, but he hopes people are excited for a new Downtown restaurant- regardless of any construction.
